For perfume or pot pourri, the lavender should be spread on trays to dry, a good tip on making trays, is to stretch a piece of muslin across a children’s hoop and suspend this in a warm room with plenty of air, preferably an airing cupboard.   A beautiful pot pourri is one that is blended with damask rose petals, for the ingredients add clove, orange flower, lavender blossom, jasmine and thyme altogether, once they have all dried place them in layers in a large bowl.    Sprinkle salts in-between each layer, then sprinkle over sliced orrisroot and for the final touch, add three slices of dried orange with cloves and the pot pourri is then ready.

For centuries lavender has been used in cooking to make lavender sugar and flowers and also to make vinegar and wine.  A lovely recipe is lavender shortbread; to make this use 500 grams of plain flour, add to these 500 grams of caster sugar and 240 grams of ground rice and 24o grams of caster sugar.   Finally add two level teaspoons of lavender flowers and mix all the ingredients together, cut out and lay on the baking tray, baking for 35 minutes on a moderate oven.
